The oysters Roberts has farmed for several years along the northwestern shore of Lady's Island recently won a taste test staged for several high-end restaurants in Chicago against competitors from around the country.
The victory catapulted his operation -- Lady's Island Oyster Farm -- into prominence among restaurants far more upscale than the local farmers markets he usually attends.
He hopes to start selling his oysters at those restaurants by the start of the summer and to get a higher price than local establishments offer.
"Trying to sell them here is like trying to sell ice to an Eskimo," he says with a laugh.
Roberts, 49, maintains any windfall won't change him. He's doing something he knew he wanted to do the moment he first laid eyes on the area as a young recruit at Parris Island, he says.

One Man's Trash: Estate Sale Draws Big Numbers in Muskego

The treasure hunters began camping out at 6:30 a.m. Monday to get the first dibs on a houseful of items, collected by two brothers over decades and kept for who knows what purpose.
The lake home located on Richdorf Drive in Muskego was in disrepair for many years, say neighbors, and only the recent passing of the owner Bob Sochurek, who lived with his brother Don in the home their parents built in 1954, allowed for the sale of its contents. Tom Ewart, owner of Open House Estate Sales, said the collection was varied and reflected the family's electronics business. Interest in the sale, which could be the largest of its kind in the state, is based on human nature and people's love of the past.

Boaters taking to the water weeks early

Warm weather seems to have trumped concerns about high fuel prices, with central Illinois boaters taking to the water weeks early this spring.
“You might as well get out and use your boat while the weather is nice,” said Scott Tucker, sales manager of the Lake Springfield Marina . “And people have definitely taken advantage of it.”
Fishermen barely had an off-season this winter.
“This winter has been very conducive to people getting out, and it’s the fishermen primarily,” said Steven Poe, owner of Eastside Marine , 2525 North Grand Ave. E. “But there have been people water-skiing already on Lake Springfield.”
